"bopis" an exotic recipe from bicol region
September 13, 2008Bopis is one spicy filipino dish from bicol region. It is Pork or beef lungs and heart sauteed in tomato, chilli and Onion.
Ingredients
- 2 Pork lungs with heart, parboiled then chopped.
- 1 pint tomato sauce
- 1 cup Cider
- 3 cloves of garlic, chopped
- 1 Onion, chopped
- 2 bay leaves
- 1 green bell pepper, diced
- 1/4 tsp ground red pepper
i suggest to use “star anise” for better aroma and flavor of bopis

Saute garlic and onions, then add meat and heart, Cider and tomato sauce. Season with salt and pepper. Bring to a simmer, and without stirring, cover and cook for 30 minutes. Add peppers amd simmer until sauce is reduced and almost dry.
